These cinnamon sugar churro waffles combine the crispy, golden edges of a churro with the fluffy interior of a waffle, all coated in cinnamon sugar and served with a rich chocolate dipping sauce. They’re a quick, crowd-pleasing breakfast or brunch treat that brings festival flavors to your kitchen—no deep frying required!
Ingredients
- 2 cups (250g) all-purpose flour (can swap half for whole wheat)
- 1/4 cup (50g) granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 large eggs (room temperature)
- 1 3/4 cups (420ml) milk (whole milk preferred, but any milk works)
- 1/3 cup (75g) unsalted butter, melted (plus more for brushing)
- 1 tsp pure vanilla extract
- 1/2 cup (100g) granulated sugar (for coating)
- 2 tsp ground cinnamon (for coating)
- 2 tbsp (28g) unsalted butter, melted (for brushing waffles before coating)
- 1/2 cup (90g) semi-sweet chocolate chips
- 1/4 cup (60ml) heavy cream
- 1 tbsp unsalted butter (optional, for chocolate sauce)
- Pinch of salt (for chocolate sauce)
Instructions
- Preheat your waffle maker to medium-high heat.
- In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- In a separate bowl, whisk eggs, milk, 1/3 cup melted butter, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and gently stir just until combined. Batter should be slightly lumpy.
- Let the batter rest for 5 minutes (optional, for fluffier waffles).
- In a shallow dish, mix 1/2 cup sugar and 2 tsp cinnamon for the coating. Melt 2 tbsp butter for brushing.
- Lightly grease the waffle maker. Pour in 1/2 to 2/3 cup batter per waffle (depending on your waffle maker). Cook for 3-4 minutes, or until golden and crisp.
- As soon as each waffle is done, brush both sides with melted butter and press into the cinnamon sugar to coat. Place on a wire rack.
- For the chocolate sauce: In a small saucepan over low heat (or microwave-safe bowl), combine chocolate chips and heavy cream. Stir until smooth. Add 1 tbsp butter and a pinch of salt; stir again. Rewarm gently if it thickens.
- Serve churro waffles hot with chocolate sauce for dipping. Add whipped cream, berries, or ice cream if desired.
Notes
Let the batter rest for fluffier waffles. Keep finished waffles warm and crisp in a 200°F oven on a rack. If chocolate sauce thickens, add a splash of cream and rewarm gently. For gluten-free or dairy-free versions, use appropriate flour and milk substitutes. Don’t overmix the batter for best texture.
